Delicious AND decadent AND chocolatey goodness all in one.
These little bars seriously hit the sweet spot, as well as give you a decent serve of fiber – which boost your gut health and helps to keep your digestion regular. They are so quick and easy to make as it requires no food processor so anyone can make it at any time.

Makes: 8 large bars or 12 – 14 smaller
Prep time: 15 minutes
Ingredients:
- 3/4 cup (90 g) soft pitted dates
- 1/2 cup (125 g) peanut or nut butter or combination (it’s your choice)
- 1/2 cup (125 mL) liquid (hot water or coffee for a mocha flavour)
- 2 heaped Tbsp (40 mL) unsweetened cocoa powder
- 1 cup trail mix OR chopped nuts OR mixed seeds OR desiccated coconut OR finely chopped dried fruit (cranberries/ apricots/ figs) OR dark chocolate chips OR a mixture of the suggestions*
Method:
- Soak the dates in hot water for a few minutes in a medium size bowl. Mash the dates with a fork to make a smooth date paste. This will take some time but persevere. Add more hot water or coffee (if using) if necessary.
- Add in the nut butter and unsweetened cocoa powder. Mix well.
- The paste will become quite thick so add splashes of hot water (or coffee) to make sure the cocoa powder mixes well.
- Mix in your additions such as trail mix or nuts or any alternative addition(s). Spoon into a small container or tin that is lined with parchment paper, and freeze for an hour.
- Cut into squares or rectangle bars and enjoy!

Dietitian’s Notes:
- Include the additions you want or have available for your fudgey bars. Bear in mind that the more you include, the more energy dense they will become (so try to moderate this). I love the crunchiness from the nuts and seeds, but the chewiness from dried fruit is also divine. Have fun trying out different versions.
