Rooibos Stewed Apples

Enjoying your favourite fruit for longer.

Never know what to do with those old, mealy & sad-looking apples hanging around in the fruit bowl?

Why not try this recipe out and make full use of all your apples! The recipe is simple, needs minimal ingredients and still gives you a delicious sweet addition to any breakfast option or snack.

Yay for a fruit serving! ⁣🍎

Serves: Makes approximately 3 – 4 cups

Prep time: 5 minutes

Cooking time: 30 minutes


Ingredients:

  • 5 medium apples, roughly chopped (keep the skin on!) ⁣
  • 2 cups (500 ml) strongly brewed rooibos tea (vanilla or spiced tea also works well)
  • 1 Tbsp (15 mL) ground cinnamon ⁣
  • 1 tsp (5 mL) vanilla essence ⁣
  • 1/2 cup (40 g) raisins or sultanas
  • Optional: Pinch of ground cloves

Method 1: Stove top

  1. Add all ingredients to a large pot, and cook over a low-medium heat for 25 – 30 minutes or until apples have softened and cooked through.
  2. Stir often to allow for the flavours to combine as well as to prevent the apples from sticking to the bottom. You may need to add more tea. ⁣
  3. If you find there is too much liquid, either let it simmer further with the lid off to reduce the liquid further. Alternatively, mix in 1 – 2 tsp tapioca flour or corn starch to thicken it. Cook for another 5 minutes to allow the apples to thicken. This is highly recommended when making the apple filling for my apple oat bars.
  4. Allow to cool and store in an airtight container/ glass jar in the fridge for up to a week!

Method 2: Microwave

  1. Add finely chopped apples, rooibos tea, spices and raisins to a microwave friendly bowl. Cook for 5 minutes on high, stirring the mixture half way through.
  2. If you find there is too much liquid, mix in 1 – 2 tsp tapioca flour or corn starch to thicken it. Cook for another 3 minutes on high in the microwave. This is highly recommended when making the apple filling for my apple oat bars.
  3. Allow to cool and store in an airtight container/ glass jar in the fridge for up to a week!

Note: The above measurements can be used as a guideline. Please feel free to play around with other spices. You can easily double or triple the batch!

  • A delicious addition to any breakfast oats, porridge, cereal/ waffle(s) or pancake(s).
  • Enjoy it as a snack with plain yoghurt or even with some ice cream or custard for a healthier dessert option.
  • Blend it up and make apple sauce from it.
  • Incorporate it in my healthy apple oat bars or other desserts.
